Strawberry Vanilla "Ice Cream" | Paleo, Vegan, Gaps

Hi there. So I have this thing where dairy is totally not my best friend. Its like one of those popular kids that you think are just the coolest and they're like "you can't sit with us" and then you're bummed because you THOUGHT they were "all that" but really they were just all hyped up.

So no dairy means no ice cream and bummer right? What else is going to accompany my tears? I KNOW. The struggle is real friends.

Because my life is tragically void of ice cream, smoothies (which are way better anyways) have become my main home slice. Also please don't be confused by the "Ice Cream" title, its just a way to trick our brains, but its just as good, maybe even better. ;) 

Before we get to what we really care about, let me just clarify that I have this love/hate relationship with making food. I burn 95% of all I cook and I never ever follow recipes. I just chop and add and blend until it tastes good and then I rapidly consume it. In conclusion, I have no idea what I'm doing. Whateva I don't currrr. Now to what we really care about. 

This is something I have been literally obsessed with lately, Strawberry Vanilla "Ice Cream" (remember its just a really thick smoothie but we're tricking ourselves k). 

This. Is. So. Good. I love strawberries, and I love vanilla, and I LOVE smoothies. Here it is, and it's 100% more simple than I make it sound, promise. 

All you need:
- Frozen Strawberries 
- Vanilla Almond Milk
I use the Califa Farms Vanilla Almond Milk. Perfect for smoothies but a little too thick and almondy and vanilla-e and rich to drink on its own, in my opinion.
- Honey 
Make sure its not sugary and chunky because that creates lumps in your smoothie and ew. 
- Blender 
I use my small Ninja blender. Its so easy to use and also to clean up. Win-win. 

The Recipe:
This serves approx. two. (Unless you want to eat it all, I'm not judging.) 
2 Cups Frozen Strawberries
1 Cup Vanilla Almond Milk
2 Tablespoons Honey
Blend it up until its creamy and smooth. 

Other Stuff: 
- To substitute the Vanilla Almond Milk, you could use either Vanilla Coconut Milk, Coconut or Almond Milk with Vanilla Extract, or poison Diary Milk with Vanilla Extract. Your options are vast.
- If you want it thicker, cut down on the milk, or add more strawberries, but it might be harder to blend, you know that stuffs. Also note that if add more stuff you might want it sweeter so you can add more honey. Play around with what tastes good to you, if you want it sweeter just add more honey, you don't want to die knowing you could have had a better smoothie right?
- To make it more "Ice Cream" like, you can put it in the freezer for a few minutes and then scoop it up and enjoy. Don't leave it in there for too long though, or it'll become gross, just chill it for a few minutes.
- Also note that if you use the Vanilla Almond Milk, it will give a very Almondy taste, if that bothers you, you can just use one of the substitutions listed above.

  1. oh my word, are you doing gaps?! how long have you been doing it? also, I LOVE this. Just finished a late-night run with this amazing goodness!

    ps: did you know berries are one of the best things to eat within 20-30 minutes after running? maybe it's just blue berries.. oh well. (:
